Grate the carrots into a large bowl. thinly slice the radishes and zucchini, and finely chop the red onion. add all the vegetables to the bowl along with fresh mint leaves.
In a separate bowl, whisk together the white wine vinegar, dijon mustard, and mayonnaise until smooth. gradually whisk in the olive oil to create a creamy dressing. taste and season with salt and pepper.
Drizzle the dressing over the salad and mix well to coat all the vegetables. adjust the seasoning if needed.
The salad can be enjoyed immediately or refrigerated in a covered container for up to 24 hours.
