To begin making wholesome veggie cutlets, wash, peel, and grate the sweet potato, carrot, and zucchini. finely chop the onion and bell pepper.
Heat olive oil in a pan over medium heat. add chopped onion and bell pepper and saute until they soften.
Add the grated vegetables, peas, and corn kernels to the pan. sprinkle cumin powder, paprika, and a pinch of salt. stir-fry the vegetables until they are cooked and tender.
Once cooked, remove the pan from heat and allow the mixture to cool down.
In a mixing bowl, combine the cooled vegetable mixture, grated raw mango, and a bit more salt if needed. mix well to combine all the flavors.
