In a large mixing bowl, combine the chopped spinach, chana dal, instant oats, mashed boiled potato, chopped onion, red chilli powder, turmeric, coriander powder, garam masala, corn flour, asafoetida, and salt. mix well to form a uniform mixture.
Shape the mixture into thin patties and create a slight impression in the center of each patty.
Heat a pan with about a tablespoon of oil and place the shaped cutlets in the pan. shallow fry them over medium heat until they turn brown and crispy on one side.
Flip the cutlets and fry them on the other side until they become light brown.
Once cooked, remove the cutlets from the pan and drain them on a kitchen tissue to absorb any excess oil.
