Heat 1/2 teaspoon of oil in a pan and saute the sprouted mung beans on medium heat for 2 to 3 minutes. transfer them to a bowl.
In the same pan, add another teaspoon of oil and stir-fry the cubed tofu until slightly browned on all sides. turn off the heat, add a teaspoon of lime juice, and toss.
In a small bowl, mix the dry masalas - chaat masala, cumin powder, coriander powder, and red chilli powder.
Sprinkle a generous pinch of the dry masala mix onto the tofu and toss well. set aside.
In a salad bowl, combine the saute mung beans, stir-fried and spiced tofu, and the rest of the chopped vegetables.
