Heat sesame oil in a pan and fry the tofu on both sides until it turns golden brown and crisp, approximately 6-8 minutes. remove the tofu from the pan and set it aside on a separate plate.
In the same pan, add chopped onion, red bell pepper, green bell pepper, and yellow zucchini. season with black pepper and salt to taste. stir-fry the vegetables on high flame for 4-5 minutes.
Prepare the salad dressing by combining lemon juice, honey, and crushed black pepper in a cup. mix well.
In a separate plate, place the spinach or chopped cucumber. add boiled corn kernels, sliced carrots, and the stir-fried vegetables. drizzle the salad dressing over the vegetables.
Crumble the fried tofu and sprinkle it over the salad.
