To begin making the spicy veggie dumplings in sichuan sauce, start by preparing the dumpling wrappers. in a large mixing bowl, combine refined wheat flour and sunflower oil. gradually add water and knead until you get a soft, non-sticky dough consistency. cover the dough with a damp cloth and set it aside.
For the dumpling filling, heat a heavy-bottomed pan and add oil. saute the garlic, ginger, onions, cabbage, peas, and spring onions for about 10 minutes until the cabbage becomes soft and crunchy.
Add soy sauce, red chilli sauce, honey, salt, and pepper to the saute vegetables. toss well to ensure that the sauces are evenly coated with the vegetables. set the filling aside to cool down.
Next, prepare the sichuan sauce. heat sesame oil in a small flat-bottomed pan. add sichuan chilli paste and sesame seeds. cook for a few minutes until the aroma is released. set the chili oil aside.
In a saucepan, combine soy sauce, water, demerara sugar, organic cinnamon stick, star anise, and ginger. heat the saucepan on low heat, stirring occasionally, until the ingredients are well combined and the sauce thickens slightly. after 10 minutes, turn off the heat.
