To begin making the spicy corn and peas kachori, prepare the dough by combining all-purpose flour, ghee, carom seeds, and salt in a large mixing bowl. mix well until the mixture resembles breadcrumbs.
Gradually add water and knead the dough to form a soft and smooth consistency. cover the dough and set it aside for 10 minutes to rest.
In the meantime, prepare the filling. in a food processor, combine green peas, sweet corn, green chilies, ginger, fennel seeds, garam masala, chaat masala, and salt. pulse until you have a coarse mixture.
Transfer the filling to a bowl and adjust the salt and spices according to your taste.
Divide the dough into 12 to 15 equal portions and roll each portion into a 2-inch diameter circle.
