In a grinder, grind ginger, spring onions, and bird's eye chilli to form a paste. set it aside. soak the bread slice in a little warm water.
Coarsely blend the sweet corn in a blender. transfer it to a large mixing bowl and add the ginger-chilli paste, mashed potato, and garam masala. mix well.
Squeeze out all the water from the soaked bread slice and add it to the sweet corn kebab mixture. knead lightly. cover the bowl with cling film and refrigerate for 10 minutes.
Oil the skewers and line and oil a baking tray. preheat the grill to high. oil your hands before skewering the kebabs. add gram flour to the kebab mixture and mix well. divide the mixture into 6-8 portions and shape them along the length of the skewers. it can be a messy job, but oiling your hands will help.
Place the skewers on the lined and oiled baking tray. brush the top of the kebabs with oil. grill them on high heat for 12 minutes.
