In a bowl, mix the all-purpose flour, salt, and oil together by rubbing them together. this helps in making the crust crispy. slowly add warm water to form a firm dough. let the dough sit for at least 10 minutes. in the meantime, we can prepare the filling.
Heat oil in a pan over low heat. add besan (gram flour), fennel seeds, coriander seeds, red chilli flakes, amchur powder, asafoetida, and salt for the filling.
Roast the besan mixture over low heat, stirring continuously, for 2-3 minutes until the spice mix becomes aromatic. turn off the heat and transfer the mixture to a bowl. add about 3 tablespoons of warm water and mix well. this will make a sticky dough. let it sit for five minutes, allowing the besan to absorb the water and become crumbly.
Take the dough and knead it for a minute. divide the dough into twelve equal parts.
Take one part of the dough and flatten the edges with your fingers to form a 3-inch circle, leaving the center slightly thicker than the edges.
