If using tamarind paste, place the tamarind pulp in a small bowl a few hours before making the curry (preferably overnight). cover the pulp with hot or boiling water and let it soak until soft and pliable. remove the seeds and fibres, and press the pulp through a sieve to obtain the pulp.
For the curry paste, soak the red chilies in five tablespoons of hot water for 1-2 hours. alternatively, microwave them for 2-3 minutes and let them soak for about an hour.
In a food processor, combine the soaked chilies (including the soaking liquid) with the remaining paste ingredients in the listed order. blend until a smooth paste is formed. adjust the consistency with a little more water if necessary. refrigerate or freeze any unused portion of the paste.
Slice the chicken breasts crossways into thin, approximately 3mm/1/8in thick slices.
