To prepare spiced lentil cakes in tangy tomato sauce, start by soaking the chana dal and urad dal in water for at least three hours.
Drain the soaked dals and place them in a grinder. add fresh ginger, green chilies, cumin seeds, salt, and sugar. grind everything into a smooth batter consistency, adding a little water if needed.
Transfer the batter into a dhokla pan or a steaming vessel and steam it for approximately 30 minutes or until it becomes firm and non-sticky.
Once steamed, allow the lentil cake to cool and set. then, cut it into diamond-shaped pieces.
Heat a shallow frying pan and add a small amount of cooking oil. pan-fry the lentil cakes until they turn golden brown and crispy on both sides. remove and set aside.
