To begin making the spiced apple gourds with tangy tomatoes, wash, dry, and cut the spine gourd (apple gourd or tinda) into thin slices, discarding the seeds portion in the center.

Heat oil in a heavy-bottomed pan or kadhai over medium heat. add the cumin seeds and let them crackle.

Once the tomatoes are soft, add the sliced apple gourd (tinda), season with salt, and cook until the gourds are half cooked.
