To prepare the cheesy chilli potato stuffed mini kulcha, start by making the dough. in a mixing bowl, combine whole wheat flour, all-purpose flour, active dry yeast, curd, sugar, and salt. mix with your fingers.
Gradually add warm water and knead to make a soft dough. drizzle some oil and knead for a few more minutes. cover the bowl and allow the dough to rest and rise for about 2 hours.
For the potato stuffing, mix mashed potatoes, onions, green chillies, dry mango powder, chaat masala powder, salt, and chopped mint leaves.
Now, take a portion of the dough, dust it with flour, and flatten it using a rolling pin to about 2-inch diameter.
Spoon the potato stuffing onto the kulcha dough, add grated cheese, and seal the edges.
