Preheat the oven to 425ÔøΩf (218ÔøΩc).

Slice the young carrots lengthwise. toss the carrots with 1 tablespoon of olive oil and season lightly with sea salt. spread the carrots out in a medium roasting pan or baking sheet in a single layer. roast them in the preheated oven for 25 to 30 minutes until the tips turn crispy and they achieve a golden brown color with a few charred spots. the carrots should be tender in the middle, allowing a knife to easily pierce through the center.

While the carrots are cooking, prepare the sauce. in a small bowl, mix together the minced garlic, lime juice, lemon zest, fish sauce, red pepper flakes, and black pepper. taste the sauce and season with additional salt if needed. pour the sauce over the roasted carrots as soon as they come out of the oven, ensuring all the carrots are well coated. serve the roasted carrots hot or warm as a delightful side dish.
