To prepare the minty quinoa pilaf, start by washing 1 cup of quinoa and soak it in water for two hours. rinse it thoroughly to remove any dirt.
Heat ghee in a pressure cooker. once the ghee is hot, add the minced garlic and sliced onions. saute until the onions become soft and translucent.
Stir in the chopped green chilli, soaked quinoa, and the dry spices - cinnamon stick, cloves, and cardamom.
Add salt to taste and toss everything on high heat for about two minutes to enhance the flavors.
Pour two cups of water into the pressure cooker and close the lid. pressure cook the quinoa for two whistles.
