To begin making the spicy black bean soup with mojo sauce, first cook the black beans until they become soft. you can either pressure cook them or cook them in a saucepan on the stovetop.
In a saucepan, heat the extra virgin olive oil. add minced garlic and chopped onion. saute until the onion becomes translucent.
Add diced green capsicum and carrot. stir and cook covered for 2-3 minutes until they become slightly tender. add a little water if needed.
Now, add the diced tomatoes, cooked black beans, cumin powder, dried oregano leaves, red chili flakes, and salt. pour in some water and bring it to a boil.
Mash some of the beans with a ladle to thicken the soup. (you can also blend some beans in a food processor if you prefer a thicker consistency).
