Preheat the oven to 180 degrees celsius.
Cut the eggplants into thin circles and sprinkle a teaspoon of salt over them. let them sit for ten minutes, then squeeze out the water by pressing the eggplants between your palms.
Rub olive oil on the eggplants and roast them in the preheated oven for about ten minutes or until they change color and appear cooked. set them aside.
If using mushrooms, quarter them and saute them with a teaspoon of olive oil until slightly cooked. this takes about 2 minutes on medium flame.
In a large pot, bring salted water to boil and cook the lasagna sheets until al dente (about 8 to 10 minutes). remove and drain, drizzling a little olive oil over them to prevent sticking.
