To create the fragrant dill and pea millet pilaf, prepare a smooth paste by blending the fresh coconut, coriander seeds, cumin seeds, green chillies, and cinnamon stick. use minimal water to achieve a paste-like consistency.
In a pan, heat a bit of oil. add cumin seeds and allow them to sizzle. toss in the cashew nuts and fry them until golden. introduce the diced tomatoes and saut„© for around 30 seconds to a minute. follow by adding the cubed sweet potato and fresh peas.
Incorporate the finely chopped dill leaves and saut„© until they soften and release their aromatic fragrance, which usually takes about 2 to 3 minutes.
Now, introduce the prepared spice paste into the pan and cook until the raw aroma diminishes.
Gently mix in the washed varagu millet, ensuring the flavors combine thoroughly.
