To begin making the chicken and sweet potato dill curry, heat a small skillet with a tablespoon of oil. add coriander seeds, cumin seeds, and cinnamon stick, and allow them to sizzle.
Add ginger and garlic to the skillet and saute until they soften for a few seconds.
Add chopped onions and saute until they turn translucent.
Continue to fry until the onions turn golden brown and are caramelized well.
Switch off the heat, transfer the saute onion mixture into a grinder, and grind it to a smooth paste.
