To prepare the spicy chicken ghee roast with a tangy twist, thoroughly clean the chicken thighs and ensure they are dry.

For the marinade: in a mixing bowl, combine yogurt, turmeric powder, and lime juice. mix well.

Add the cleaned chicken thighs to the marinade, making sure they are well coated. allow it to marinate for at least 1 hour.

Preparing the roast masala: in a dry skillet, toast red chilies, fenugreek seeds, cumin seeds, coriander seeds, black pepper, and cloves on low heat until fragrant. remove from heat and let them cool.

Once the spices have cooled down, grind them along with garlic and tamarind paste using a little water, to form a smooth paste. set aside.
