In a bowl, combine oat flour, instant oats, baking powder, salt, cinnamon, nutmeg, cardamom, and cloves. mix well to ensure all the dry ingredients are evenly incorporated.

Prepare a flax egg by mixing flaxseed meal and water in a small bowl. stir well and let it sit for 5 minutes to thicken.

Add the flax egg, maple syrup, vanilla extract, and maple syrup to the dry ingredients. mix thoroughly to combine. incorporate chopped walnuts and dates into the dough.

Caramelize the grated carrots by cooking them in a skillet with maple syrup and brown sugar. allow the mixture to thicken slightly and the carrots to caramelize. let it cool for 3-4 minutes.

Add the caramelized carrot mixture to the dough and mix well. refrigerate the dough for at least 20 minutes to allow the oats to absorb excess moisture and reduce stickiness.
