Begin by washing the chicken cubes and patting them dry with a paper towel.
In a bowl, marinate the chicken with 1 tablespoon of cornflour, 2 teaspoons of light soy sauce, rice wine, and 1 tablespoon of cooking oil. mix well and let it marinate for 30 minutes.
While the chicken is marinating, prepare the sauce in another bowl by combining 5 tablespoons of light soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of sugar, rice vinegar, water, and 1 teaspoon of cornflour. mix the ingredients thoroughly and set the sauce aside.
Heat 1 tablespoon of cooking oil in a wok and stir-fry the marinated chicken cubes until they are cooked, but be careful not to overcook them to avoid making them hard and chewy. once done, set the cooked chicken aside and clean the wok.
Add 2 tablespoons of cooking oil to the cleaned wok and heat it up. stir in the finely chopped ginger, minced garlic, and dry red chillies. keep the heat on low to release the aroma of the red chillies.
