To prepare the banana oatmeal pancakes with strawberry sauce, start by grinding the instant oatmeal, baking powder, baking soda, salt, and sugar in a mixer or blender until it forms a fine flour-like consistency.
Now add the ripe banana, buttermilk, and vanilla extract to the mixer jar. blend this mixture along with the oat flour to form a smooth batter.
If the batter becomes too thick, you can add a few more tablespoons of buttermilk to achieve the desired consistency.
Heat a griddle or non-stick pan and lightly grease it with coconut oil or butter.
Spoon about 2 tablespoons of the pancake batter onto the hot griddle, keeping the flame low. cook the pancake until it browns on one side, then flip it to cook the other side as well.
