Begin by washing the brown rice, idli rice, urad dal, and poha thoroughly under running water. soak them together with fenugreek seeds in enough water for about 4-6 hours.
After soaking, drain the water and transfer the soaked ingredients to a blender. add ragi flour, salt, and coconut sugar to the blender.
Grind everything into a smooth batter by adding water gradually. the consistency of the batter should be similar to that of regular dosa batter.
Pour the batter into a large mixing bowl and let it ferment overnight or for about 8 hours. the fermentation process will enhance the flavor and texture of the appams.
Once the batter is well-fermented, give it a gentle stir. add more water if needed to adjust the consistency; it should be pourable yet slightly thick.
