To begin making the mediterranean-style chicken cacciatore with mushrooms & sundried tomatoes, first prepare all the ingredients. remove the skin from the chicken thighs, chop the sundried tomatoes, and chop the remaining ingredients.

Heat olive oil in a heavy-bottomed pan over medium heat.

Add the garlic, red onion, and fresh herbs (basil and rosemary). saut„© for a few minutes until the onions become soft and fragrant.

Place the chicken thighs on top of the saut„©ed onion and garlic mixture. season the chicken with salt and pepper.

Sear the chicken thighs in the pan over medium heat until they start to brown on both sides. this will also caramelize the onion mixture, adding rich flavors to the dish.
