To prepare the roasted falafel waffles with mediterranean salad, start by combining the soaked and cooked chickpeas, onion, garlic cloves, parsley, cilantro, cumin powder, coriander powder, lemon juice, red chili flakes, black pepper, and sun-dried tomato slices in a food processor.

Pulse the mixture into a coarse texture, then add chopped coriander, parsley, onion, and minced garlic. gently mix everything together and let the mixture sit for about half an hour to absorb the flavors.

Preheat the oven to 200 degrees celsius and roast small cauliflower florets until they are tender and slightly browned.

In a separate bowl, toss together salad leaves, sliced tomatoes, chopped red onion, green olives, and grated beetroot. drizzle with a dressing made from olive oil, lemon juice, black pepper, and salt.

Prepare the tahini dressing by whisking tahini, garlic, lemon juice, black pepper, and salt in a bowl until smooth.
