In a large bowl, combine the whole wheat flour, atta, salt, sugar, yeast, basil, thyme, and black pepper.
Pour in the olive oil and water, and mix until the dough comes together.
Transfer the dough to a floured surface and knead until it becomes smooth and elastic.
Place the dough in a well-oiled bowl, turning it to coat it with oil. cover with a damp cloth and let it rise in a warm place for approximately an hour.
Preheat the oven to 200‚∞c (392‚∞f).
