To prepare the lentil vegetable salad, start by washing and soaking the moong dal for half an hour. then, drain the water.
Meanwhile, prepare and set aside all the vegetables, such as cucumber and carrots, by washing and chopping them.
In a skillet, heat oil and add mustard seeds, asafoetida, green chillies, and curry leaves. allow them to temper.
Add the tempered mixture to the mixed vegetables.
Drain the soaked moong dal and add it to the vegetable mixture. also, add salt to taste.
