To prepare the spicy roasted baby potatoes (jodhpuri aloo), wash the baby potatoes and pressure cook them until they are well cooked (about 4 whistles).
Peel the cooked potatoes, cut them into halves, and set aside.
Heat oil in a heavy-bottomed pan, add the red chilies, cumin seeds, fennel seeds, and white sesame seeds. let them splutter.
Add the red chili flakes and asafoetida, and stir to infuse the oil with flavors.
Now, add the boiled baby potatoes, kashmiri red chili powder, and turmeric powder. season with salt and mix well.
