Heat a skillet over medium heat and add a teaspoon of oil. add cumin seeds and let them crackle.
Place the skewered aloo gobi on the skillet and roast until you see brown spots on the vegetables.
Roast all the skewers on low to medium heat and set them aside.
Making the paratha for the kathi rolls: in a bowl, mix whole wheat flour, salt, and one teaspoon of oil. add water gradually and knead to form a smooth dough. cover and let it rest for 10 minutes.
Divide the dough into equal portions and roll them into balls. flatten each ball and roll it into a paratha.
