To make the stuffed moong dal aloo pakoras, first, prepare the stuffing mixture for the potatoes.
In a mixing bowl, combine the boiled and mashed potatoes with red chilli powder, coriander powder, turmeric powder, fennel seeds, lemon juice, chopped coriander leaves, asafoetida, and salt. mix well to form a uniform mixture.
Take small portions of the potato mixture and shape them into equal-sized balls. set them aside.
Next, prepare the batter for the pakoras. drain the excess water from the soaked moong dal and transfer it to a mixer jar.
Add ginger, green chilies, and a pinch of salt to the dal and grind it to a smooth batter using very little water.
