Wash and clean the chicken, removing any excess fat. cut the chicken breast or boneless thighs into pieces. if using chicken with bones, clean the chicken and remove the skin. set it aside.
Mince the onions and garlic in a chopper or grind them in a blender until coarse.
Heat the oil in a nonstick frying pan or a heavy-bottomed stainless steel pan over high heat. add the minced onions and garlic and saute while periodically stirring. keep the heat high for the first 8 to 10 minutes to allow the onion water to evaporate quickly.
While the onion mixture is cooking, add the tomato sauce to the same food chopper or blender and puree it.
Once the water has evaporated from the onions, reduce the heat to medium and cook for 8 to 10 minutes or until the onions become brown.
