Using a small circular cookie cutter, cut the puff pastry dough into circles.
Create the ring shapes for the vol-au-vent by using another smaller circular cutter to make rings from the extra circles.
Place the rings on the circular-shaped dough and seal them using milk to form the vol-au-vent shapes.
Refrigerate the vol-au-vent shapes for 10 minutes and then brush them with some milk before baking.
