To prepare the creamy brinjal yogurt stew, start by soaking the chana dal, toor dal, and rice in lukewarm water for at least 30 minutes.
After soaking, grind the soaked dals and rice with a little water to form a smooth paste. then, add fresh coconut and curd to the mixture, and grind again in the same mixer to form a creamy paste. set this paste aside.
Heat a kadai with oil, and add the chopped brinjal cubes. sprinkle some salt and turmeric powder over the brinjal, and cook until it becomes soft.
Pour in the tamarind water and allow it to cook for at least 15 minutes until the brinjal turns mushy.
Mix in the curd and the freshly ground dal-rice-coconut paste into the kadai, and stir well. add salt to taste, and adjust the consistency by pouring in some more water.
