To prepare the creamy avocado and parsley pasta salad, start by halving the avocados, removing the seeds, and scooping out the pulp.

Boil the whole wheat pasta in sufficient water with a pinch of salt for about 8-10 minutes, then drain and set it aside.

If using canned corn kernels, drain them, or if using fresh ones, boil them until they are soft and tender.

In a blender, combine the avocado pulp, fresh parsley, and garlic cloves, and blend until you get a smooth paste.

Season the avocado paste with salt and ground black pepper to taste, and then add the lemon juice and extra virgin olive oil. give it one last mix to combine all the flavors.
