To prepare the creamy avocado and parsley pasta salad, start by halving the avocados, removing the seeds, and scooping out the pulp.
Boil the whole wheat pasta in sufficient water with a pinch of salt for about 8-10 minutes, then drain and set it aside.
If using canned corn kernels, drain them, or if using fresh ones, boil them until they are soft and tender.
In a blender, combine the avocado pulp, fresh parsley, and garlic cloves, and blend until you get a smooth paste.
