In a medium bowl, mash the avocados and white beans together until well combined but still slightly chunky.
Add lemon juice, extra virgin olive oil, minced garlic clove, fresh thyme, and ground black pepper to the avocado and white bean mixture. stir well to incorporate all the ingredients.
Take 4 slices of whole wheat bread and spread about 1/2 cup of the avocado and white bean mixture onto each slice.
Top each sandwich with 1/4 cup of sliced red bell peppers, 2 slices of cheddar cheese, and 1 cup of lettuce.
Place the remaining 4 slices of bread on top to complete the sandwiches.
