To prepare proven„ßal tomato and rice soup, heat oil in a saucepan and saut„© onions, carrot, garlic, orange zest, thyme, and fennel seeds powder.
Once the vegetables start to soften, add the tomato puree and water. mix well until everything is incorporated.
Add the chopped ripe tomatoes and vegetable stock to the mixture, and season with salt, pepper, and sugar.
When the soup starts boiling, add the semi-cooked white rice.
Close the lid and simmer for around 12-15 minutes or until the rice becomes tender.
