To prepare crunchy sweet and sour sabudana mix, heat a kadai with oil for frying.
To test if the oil is heated optimally, drop one pearl of sabudana into the hot oil. if it rises instantly to the surface, the oil is ready for frying.
Carefully add the sabudana to the hot oil and let it fry and puff up for a couple of minutes without allowing it to change color.
Once the sabudana has puffed up, remove it from the oil and place it on a plate lined with a paper towel to absorb any excess oil.
In a similar manner, fry the peanuts until they turn golden brown. be cautious not to over-fry them, as they can become bitter.
