How To Cook?

In a heavy-bottomed pan, heat ghee over medium heat. add the whole spices - green cardamom, black cardamom, black pepper, cloves, cinnamon sticks, and cumin seeds. saute for about 15 seconds until they release their aroma.

Add sliced onions and saute until they become translucent.

Now, add the mutton pieces to the pan and cook them until they turn brown on all sides.

In a blender, make a paste of garlic, ginger, and green chillies. add this paste to the mutton along with yogurt. mix well to coat the mutton with the yogurt-spice mixture.

Reduce the heat to low, cover the pan, and let the mutton cook slowly in its own juices for about 30 minutes. stir occasionally to prevent sticking.
