To prepare spiced mutton dak bungalow curry, thoroughly clean the mutton and let it drain in a large pasta strainer for 30 minutes to remove excess water.

In a large bowl, marinate the drained mutton with curd, ginger-garlic paste, red chili powder, kashmiri red chili powder, turmeric powder, and mustard oil. ensure the meat is coated well with the marinade. cover the bowl and refrigerate for 6-8 hours or overnight.

Prepare the special spice powder by dry grinding ingredients like small cardamom, ghee, fenugreek leaves, bay leaves, onion, tomato, ginger paste, garlic paste, salt, organic cinnamon, green cardamom, black cardamom, mace, nutmeg powder, cumin seeds, coriander seeds, green chili paste, and red chili paste in a spice grinder. keep this special spice powder aside in an airtight container.

Remove the marinated mutton from the refrigerator 2 hours before cooking.

Marinate boiled eggs and potatoes with salt and turmeric powder for 10 minutes.
