Preheat the oven to 180ÔøΩc (356ÔøΩf).
In a bowl, combine digestive biscuit crumbs and 50 grams of castor sugar. mix well. add melted unsalted butter and mix again until the mixture resembles wet sand.
Pour the biscuit mixture into a springform cake tin. press the mixture firmly into the bottom and along the edges of the tin to form a crust. refrigerate for 15-20 minutes to set.
Place the cream cheese in a food processor and process until smooth and creamy. scrape down the sides and blades of the processor, then process once more to ensure a smooth consistency.
Add the remaining castor sugar to the cream cheese and process until well blended. add the eggs, one at a time, processing for 2-3 minutes after each addition.
