To prepare saffron-infused basundi, we will start by condensing the milk.
Pour the milk into a heavy-bottomed saucepan and place it over high heat. bring the milk to a boil.
Add jaggery to the boiling milk and stir continuously until it dissolves completely.
Once the jaggery has dissolved, reduce the heat to low and simmer the milk mixture while stirring continuously. continue simmering until the milk is reduced to three-fourths of its original quantity.
During this process, you'll notice that cream forms on the sides and bottom of the pan due to condensation. be sure to scrape down this cream and add it back to the condensing milk.
