To start making the golden saffron swirls, warm 3/4 cup of milk and butter in a saucepan until the butter melts.
Add a tablespoon of sugar and saffron to the milk and butter mixture and stir to dissolve the sugar. remove from heat and let it cool to lukewarm temperature.
Once the milk mixture is lukewarm, add the active dry yeast to it and let it sit for 5 minutes to activate.
In the bowl of a stand mixer, combine flour, salt, and the remaining sugar. whisk the dry ingredients together.
Gradually add the lukewarm milk mixture to the flour and start kneading the dough.
