Hang the curd in a muslin cloth, cheesecloth, or kitchen cotton napkin for 3 to 4 hours. place a bowl beneath it to collect the whey.
Puree the mangoes in a blender.
In the same blender, add the thick hung curd, crushed cardamom seeds, saffron strands, and sugar.
Blend the mixture until it is smooth and well combined.
Pour the saffron mango shrikhand into individual serving bowls.
