To prepare the pressure cooker gajar halwa with rich khoya, grate the washed and peeled red carrots.
In a pressure cooker, heat ghee on medium flame and add the grated carrots. saute them for a couple of minutes.
Sprinkle a little water over the carrots and close the pressure cooker with its lid.
Pressure cook the carrots for 1 whistle and then turn off the flame. allow the pressure to release naturally.
While the carrots are cooking, take a kadai and heat milk over medium flame. bring it to a rolling boil, then reduce the heat and let the milk thicken to 3/4th of its original quantity.
