Cut the potatoes into thick slices and soak them in plain water for a few minutes.

Rinse the potato slices 3-4 times with water and use a kitchen towel to pat them dry.

Heat oil in a pan over medium heat. to check the temperature of the oil, drop a small piece of potato into the pan.

Once the potato starts floating, remove it from the oil and keep the heat on medium.

Place 8-10 potato slices at a time in the hot oil, ensuring they are spread out. flip them occasionally for even frying.
