To begin making chettinad tomato rice, cook the rice to a fluffy texture and set aside.
Coarsely pound the ginger, garlic, and fennel seeds using a mortar and pestle, and keep aside.
Heat ghee in a pan over medium flame. add the cinnamon stick and cloves, and let them splutter.
Add the pounded ginger, garlic, and fennel seeds mix and saute until the raw smell disappears.
Stir in the curry leaves and sliced onions. saute until the onions turn translucent.
