To prepare the cheesy zucchini potato bites, start by pressure cooking the potatoes. place the potatoes in a pressure cooker with 1/4 cup of water and cook for about 4 whistles.
Allow the pressure to release naturally, then peel the potatoes and mash them. transfer the mashed potatoes to a mixing bowl.
Grate the zucchini and set it aside. heat a flat skillet and add the grated zucchini. saute for approximately 5 minutes until the moisture evaporates.
Add the saute zucchini to the bowl with mashed potatoes. sprinkle in the red chilli flakes, oregano, thyme leaves, black pepper powder, and salt to taste.
Add the grated cheddar cheese to the mixture. mix well until all the ingredients are evenly combined.
