To prepare the zucchini oatmeal mini omelettes, grate the zucchini, transfer it to a mixing bowl, and add a little salt. mix well and let it stand for a few minutes to allow the zucchini to release most of its water.
Squeeze out all the water from the grated zucchini and set it aside.
In a separate bowl, whisk the eggs until they become light and fluffy.
Add the chopped onion, squeezed zucchini, finely chopped green chilli, oats flour, a pinch of salt, and a pinch of black pepper powder to the whisked eggs. mix everything together well to create a fluffy omelette mixture.
Heat a skillet over medium flame and brush it with a little oil.
