To create the beet and goat cheese medley with balsamic glaze, start by roasting the beetroot in the oven with a drizzle of olive oil until they are tender and have a slight charred appearance.
While the beetroots are roasting, prepare the balsamic glaze. in a small saucepan, combine the balsamic vinegar and maple syrup. simmer over low heat until the mixture thickens slightly. remove from heat.
Once the roasted beetroots are done, let them cool slightly and then peel and slice them.
In a mixing bowl, whisk together the remaining olive oil, minced garlic, fresh thyme leaves, salt, and pepper.
Add the sliced beetroots to the bowl and gently toss them in the olive oil mixture until well coated.
